Regular Unicode works for the Hindi phones. I have tested WML/XHTML pages with embedded unicode and a Nokia
phone that supports hindi (the 6230) displays to correctly.

I assume that the same would be used for SMS too. In fact with Unicode the number of characters per message becomes 
half, i.e., around a max of 80 chars per message.
